Avocado Chicken Salad

So there has been a “viral recipe” going around Pinterest for awhile for “mayo-free” avocado chicken salad. Except it’s one of those magical Pinterest things that is too good to be true — if you click on the recipe, it does, in fact, have mayo in it.

So here’s my recipe for an avocado chicken salad made from my favorite thing (a rotisserie chicken!)…and it doesn’t have any mayo in it at all! I mean, it’s probably not something you should eat for every meal, but it’s pretty good for you!


Avocado Chicken Salad

2 ripe avocados

1 large vine-ripened tomato, diced

1 bunch (4-5) scallions, washed and diced

1 small (6 oz) container of plain Greek yogurt

1 small rotisserie chicken

1 tbsp lemon juice

1. Eviscerate the chicken. Tear it limb-from-limb. Then, when you have a nice, neat pile of meat, chop it up into tiny little bits. Feel better? I did.

2. Pit the avocados and put them in a food processor (or blender) with the yogurt and lemon juice. Puree until it resembles the slop above.

3. In a medium mixing bowl, throw everything together and mix it until it resembles the slop below.


We ate it on a bed of spinach, but I’m sure you could find more creative ways to eat it. Sean gave it 50 thumbs up. I definitely recommend giving it a try. It came out much tastier than my attempt at the initial Pinterest phenomenon.

In other, completely different, news, I have decided to post only once a week for my own sanity. If that. In other words, I’m giving up my schedule. I think I’ll enjoy it better this way. Anyway, enjoy!
