Cowboy Cookies

I grew up with these cookies – my favorites, because of the butterscotch chips, and because they were a different treat than the more oft-offered chocolate chip cookies. I was lucky to have a mother who baked frequently, and she always made these best.

The back of the butterscotch chip bag calls them Oatmeal Scotchies, which is weird to me, but maybe that’s what they’re called.

I modified it a little, because I was missing an egg and I don’t like a lot of sugar, and it turned out pretty well.

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup (2 sticks) butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups old-fashioned oats
  • 1 package butterscotch chips

Directions:

  • Preheat oven to 375
  • Mix flour, baking soda, cinnamon, and salt in a small bowl
  • In a larger bowl, cream butter and sugars together. Add egg and vanilla.
  • Mix in flour mixture and then oats. Fold in butterscotch chips.
  • Bake for 8-10 minutes until golden and nearly set. Allow to cool on baking sheet.
